Tina: Bobbie, Alice and I will start the lettuce. We need to wash and tear the lettuce into sandwich sizes pieces. We are going to do about 20 heads of lettuce. Bobbie you start the washing process. I’ll do the coring process, Alice you remove the outer leaves. Once we have that done, we will all start to tear the lettuce into sandwich size and stack them in the chafing dishes. Once you are finished with what I have assigned, do not wander off. We have a bunch more to do to prepare for tonight.

Tina went and found a laundry basket to put the processed heads in. She then pulled a large garbage can with a bag liner to start the process. Dylan had found a garbage can as well.

Alice: Wow, there is a lot to do. What are the others doing outside?

Tina:  Well, there will be a couple of refrigerators which will be delivered. An ice freezer, some commercial size coolers, some garbage cans and some more tables and chairs.  Then the beer and the wine will be delivered with a set of hand trucks. So, they will be moving the beer and wine to the refrigeration unit. If the coolers have lids, then they will be loading some ice and icing down some beer and wine to be available to our guest.  They will be setting up the wine station with plastic glasses and the napkins.  Then they will set up the food tables and decide the placement so that the food can be accessed by both sides and making sure that there is enough to hold all the food. Bette will probably put place cards to show where food should be set up. Then there are lights to hang and a general check out of the grill so that it is ready to go for this afternoon. They may also go out to the beach and dig a pit for the bond fire and set it up for tonight. Some of the young folks might want to gather around the bond fire.

Alice:  And what else do we have to do after the bread, condiments, lettuce, tomatoes, and onions are done?
